I'd like to thank Taylor T. for calling me out on not publishing last week. My thinking was that everyone would be cooking their go-to holiday specialty and eating absurd amounts of ham, so why bother. But we were only two issues in, and I already flaked out. Don't lose faith, dear reader.
I hope everyone got to take a little time off for the holidays. Here are a couple recipes that will help get you through those first few days back at work.

Monday: 10 of Our Easiest Slow Cooker Drop Dinners Ever
An interesting list, but use the one for "pizza chickpeas". That's the side for the Italian breaded pork chops.

There are a thousand recipes on the Internet for ways to make pork chops suck less. This is a really good one.
Most posts on this blog are packed with helpful cooking tips as well, so bookmark that junt.
Sunday and Tuesday: White Chicken Chili
I cook this dozens of times every winter. Cook and eat on Sunday, then have leftovers Tuesday.
While the arrowroot or cornstarch does say "optional", I recommend using cornstarch instead of arrowroot and also recommend you use it because it does a lot for the texture of the soup.
This makes plenty for leftovers, but it doesn't keep quite as long as beef chili in my opinion. Don't be afraid to freeze some if you aren't sure you'll be able to finish it all within three days.
Grocery List

- parsley (the smallest amount you can find)
- 1 large yellow Onion
- Garlic
- cilantro
Meats
- 4 pork chops boneless, 1 inch in thickness
- 2.5 lbs Boneless Skinless Chicken Thighs
Boxes, Bags, Cans
- 3 cans Great Northern Beans
- 4 (15-ounce) cans chickpeas
- 32-ounce jar marinara sauce
- 2 8 oz cans Diced Green Chilies
- 1 can Coconut Milk (or regular milk) (optional)
- Chicken Broth
Oils and Spices
- olive oil
- Italian seasoning
- garlic powder
- Cumin
- Chili Powder
- White Pepper
- Arrowroot Starch or cornstarch (optional)
Other Stuff
- 2 medium eggs
- 2 tbsp milk
- 1 cup breadcrumbs Italian breadcrumbs
- 1/2 cup parmesan cheese
