I skipped last week because we are in complete disarray after the holidays over here at the Morris house. I don't know if it's the same for y'all, but I have a hard time getting back into a cooking routine after a holiday scrambles our schedules. I've been cobbling together meals of random leftovers for almost two weeks, and I hate it.
So this week we're getting things back to good. I'm not going to assign days to this one because 1) who cares, really and (2) I'm sending this out on a random Tuesday morning.

Slow Cooker Beef & Broccoli
These slow cooker Asian-inspired recipes are usually very mediocre. But for some reason, I keep trying them in hopes that one day I'll stumble across one that lives up to expectations. It makes sense that these are usually not as good as "the real thing"; reminds me of one of my favorite quotes about Asian cooking:
It's many involved steps of preparation in advance of like four minutes of hot, fast, harrowing, tricky cooking.
Slow cooker recipes are decidedly not that. So here's to hoping.
Pasta with Asparagus, Prosciutto, Basil Butter
This has been one of our go-to pastas for years. Inspired by the wonderful chefs / businessmen behind AMIK and Hog & Hominy, from their cookbook Collards and Carbonara. This one takes maybe 15 minutes depending on how fast you can get water to boil.
Black Bean Burgers with Roasted Red Pepper Spread
We cashed in a free meal kit coupon from one of those Hello Blue Home Chef Fresh Apron services last week, and last night I cooked the burgers. They were fine, but making the sauce reminded me of this recipe.
The patties are great regardless of what sauce you use. Here's a link to the recipe for the red pepper spread prescribed for this burger, but it's too much work. Instead, buy a jar of red pepper jelly or find a smoky aioli at the store. Just ask a store employee which aisle has the most pretentious sauces and you should be able to find something that'll work.
