Tortellini Soup
Hopefully soup season is almost over, I hate the cold. But since it isn't over yet, here's an easy soup I've made dozens of times. You can buy non-frozen tortellini at Kroger or Whole Foods (over in the refrigerated section usually near cheese) or, if you're in East Memphis, you can head over to Lucchesi's and pick up some frozen ones.
Overnight Chicken
When we have a busy week that's going to result in lots of solo parent evenings, I try to pick recipes that involve tossing something in the oven or reheating on the stove. That way there isn't much prep and you don't have to babysit it.
I'll be prepping this one Sunday and so Amanda can toss it in the oven after work on Monday. The sides will definitely be frozen veggies. Easy easy.
Mahi Mahi Tacos
I'm trying to get better at cooking fish, and be less reliant on red meat in my cooking. That's probably not gonna happen, but at least I can say I tried.
I'm planning to cheat and buy mango salsa rather than make my own. I realize I probably could buy mangoes, but that feels ridiculous. It's February.
Farro Risotto
I only have one night this week where I can cook something a little more ambitious, so I'm going to try this one. If you haven't made any kind of risotto before, it is not something you can rush. If you are in a rush, don't make risotto.
FWIW I'm skipping the poached egg on this one. No one in this family cares about poached eggs except me.
