I over-scheduled myself this week so I need two big slow cooker meals to carry us. I'll also be cooking the farro recipe from last week because that just didn't happen last week as planned. Despite writing a newsletter about meal planning I somehow neglected to put several of the ingredients for that recipe on my grocery list.
So here's to a week of slow-simmering food. Walking into the house to the smell of dinner being done makes me happy.

Chicken Tortilla Soup
I haven't cooked anything from this blog yet. I'm excited to try this recipe, but I'm not going to be following it very strictly.
I'm not a fan of the way black beans taste when they've been cooked with chicken all day. I think it also has a negative impact on the flavor of the chicken. While I don't feel as strongly about corn, I don't want the corn to taste mushy or my broth to be too sweet. So my plan is to combine all the ingredients except the black beans and corn and cook that all day.
When I get home I'll shred the chicken, then add the corn and black beans. It should only take twenty minutes or so for them to be warmed through.

Shoutout to Chandler for the link. I've tried a few recipes from this blog, and have yet to find one that was meh.
Fun fact, Cheryl did some freelance copywriting work for Simple Focus (where I work) several years ago. She works (and talks) incredibly fast. I felt very slow, mentally and physically, whenever she was in the office.

Lucky Cat Ramen
Introducing the first link in a new segment about restaurants I love.
The honor of first mention goes to Lucky Cat, mostly because it's wonderful but also because I ate there last night. Lucky Cat is just down the road from my office and they've done great things with their space. It has an awesome vibe and makes for a great date night spot.
If you've never been to a ramen spot, you may find the menu to be a little confusing. The servers there won't have any trouble walking you through it, so if you don't know what something is just ask. My go-to items here are the pork belly bao, the wings, and the mushroom donburi (it's the coolest rice bowl you'll ever lay eyes on) (also it's delicious).
Give it a try next time you're looking to switch it up from all the fancy New American eateries in town.
